Chef’s Recipe
From the kitchen of

at Coral Ridge Country Club
Beef Sate with Peanut Sauce
1 lb Beef tenderloin – makes 25 – 30 skewers
¼ cup chopped peanuts for garnish
Marinade:
Amount Measure Ingredient - Prep Method
1 cup peanut oil
½ stalk lemon grass, shredded
1 tablespoon chopped garlic
2 ½ tablespoon curry powder
1 ½ tablespoon honey
1 teaspoon fish sauce
½ teaspoon red pepper flakes
Peanut Sauce:
1 cup peanut butter
½ cup water
¼ cup lime juice
¼ cup soy sauce
½ each chopped jalapeno with seeds
1 tablespoon chopped garlic
1 tablespoon sugar
1 tablespoon peanut oil
1 teaspoon cayenne pepper
¼ cup chopped cilantro for
sauce/garnish
The Risotto:
Combine the marinade ingredients in a bowl, add the
beef, mix well and refrigerate for 1 hour.
For the sauce, combine all the ingredients in a saucepan
and bring to a boil, stirring until smooth. Let simmer until
sauce is the desired dipping consistency. Set aside.
Soak bamboo skewers in water for 30 minutes.
Skewer the meat, season with S & P and grill or sauté in a
large frying pan..
Sprinkle with chopped peanuts and cilantro.
